Ingredienser

1 kg kalveinderlår.

Et par gulerødder.

Et par løg.

Et par laurbærblade.

Salt.

 

Tunsauce:

2 pasteuriserede æggeblommer.

1-2 dl neutral olivenolie.

Salt.

2 ds. tunfisk.

50 g kapers.

3 ansjoser.

Saft fra 1 citron.

Koldpresset jomfruolivenolie.

Salt og friskkværnet sort peber.

Bredbladet persille.

Fremgangsmåde

Kalvekødet koges i letsaltet vand med skiveskårne gulerødder, løg og en flok laurbærblade. Kødet køles derefter helt af. Kog indtil kødet har en kernetemperatur på 58 grader. Så bliver det flot rosa.
