Ingredienser

1 kg kalveinderlår.

Et par gulerødder.

Et par løg.

Et par laurbærblade.

Salt.

 

Tunsauce:

2 pasteuriserede æggeblommer.

1-2 dl neutral olivenolie.

Salt.

2 ds. tunfisk.

50 g kapers.

3 ansjoser.

Saft fra 1 citron.

Koldpresset jomfruolivenolie.

Salt og friskkværnet sort peber.

Bredbladet persille.

Fremgangsmåde

Kalvekødet koges i letsaltet vand med skiveskårne gulerødder, løg og en flok laurbærblade. Kødet køles derefter helt af. Kog indtil kødet har en kernetemperatur på 58 grader. Så bliver det flot rosa. Hvis du køber et stykke billigere kød kan du mørkoge det (1,5-2 timer), så bliver det gråt og kedeligt at se på men til gengæld meget mørt.

Æggeblommerne laves til mayonnaise med olie og salt. Pisk æggeblommerne igennem og tilsæt olien dråbevis.

Smag til med salt.

Skær kalvekødet i tynde skiver og læg det på et fad. Fordel tunsaucen over kødet i et fint lag, og drys med kapers og bredbladet persille inden serveringen. Spis friskbagt foccacia eller friskbagt flûte til, og gerne en god salat. Eventuelle rester kan sagtens gemmes og spises dagen efter.
